Maestro James Coleridge teams up with Fraser Valley’s Tesfa Farms to introduce buffalo milk gelato

Vancouver, B.C. (October 31, 2018) – Uno Gelato’s maestro gelatiere James Coleridge has teamed up with Fraser Valley’s Tesfa Farms to create a new gelato flavour made with water buffalo milk.

Uno Gelato will be offering a new “Buffalo Lemon” gelato flavour at their Kitsilano location (2579 West Broadway), using water buffalo milk from Tesfa Farms and local BC birch syrup from Sweet Tree Ventures in Quesnel, BC. Maestro James is also using a new emulsification process from Italy for the first time in North America to create a warmer, creamy taste.

“We love using milk from water buffalo because of its smooth, creamy, rich consistency as well as for its amazing health benefits,” says James Coleridge, gelato master and Chief Innovator and Visionary at Uno Gelato. “Buffalo milk is used quite extensively around the world especially in Italy where they make buffalo milk mozzarella, as a healthier alternative to cow’s milk, and is similar to goat’s and sheep’s milk. It creates a wonderful texture for gelato and is a great compliment to our assortment of dairy and non-dairy offerings.”

Water buffalo milk has several health benefits and is an excellent alternative to cow’s milk, with lower cholesterol and higher calcium and antioxidant content. Buffalo milk contains A2 Beta Casein protein, which many allergy sufferers look for in milk alternatives.

According to the BC Water Buffalo Association, other benefits include:

• Water buffalo milk is pure white, with a velvety smoothness and subtle sweetness

• Buffalo milk contains high levels of the natural antioxidant tocopherol

• 58% more calcium than cow’s milk

• 40% more protein than cow’s milk

• 43% less cholesterol than cow’s milk

• High in CLA or conjugated linoleic acid

• Both milk and meat products from water buffalo are rich in conjugated linoleic acid (CLA), a compound that has been found to possess many benefits including reducing risks of cancer and diabetes and supporting bone and weight maintenance.

Water buffalo milk is relatively new in North America so we can’t wait for Vancouverites to try James’ new culinary creation using milk from our water buffalo.”

Tesfa Farms is run by two local families who are naturally raising, grass-fed, domesticated Asian water buffalos. Their passion for farm fresh foods enables them to offer honest, ethically raised, high quality food and artisan products without any hidden additives.

A graduate of Italy’s Carpigiani Gelato University and the Italian Culinary Institute, James considers himself a custodian of the old artisan way of making handcrafted small batch artisan gelato. He believes in preserving and mastering real, old-world artisan methods focusing on flavour and taste, and often highlights the finest and freshest, in-season ingredients from local farms and from all over the world.

James prides himself with keeping Vancouver top of mind as an international culinary destination, competing and placing in international gelato competitions. He was named International Gelato Master of the Year in 2014 by the International Fair of Artisan Gelato (MIG), won the Gelato World Tour North America the same year, and was the double gold winner at the 2012 Florence Italy Gelato Festival.
