James Coleridge, gelato maestro extraordinaire, is one of the most recognized gelato makers in the world. A graduate of Carpigiani Gelato University and the Italian Culinary Institute, James has gone on to bring handcrafted artisan gelato Canada.

Since 2011, James has competed in seven Italian competitions and two Gelato World Cups. He has won Best Gelato in North America twice and has represented Canada in the 2012 and 2014 Gelato World Competition.
James and his team are excited to be bringing new creative recipes featuring a wide array of local ingredients and innovative techniques to Uno Gelato. At Uno Gelato you will experience only the flavours of true artisan handcrafted gelato, created and made by one of the world’s best.
Born in Naples Italy, Salvatore attended the distinguished Carpigiani Gelato University in Bologna, after 10 years of working in the restaurant industry. In 2013, Salvatore eventually migrated to Canada to be given an opportunity to apprentice with Maestro James. Ultimately Salvatore became a Gelato Master himself, and ran his own gelato lab production with Bella Gelateria.
He is the co-winner of the 2014 Gelato World Tour North American Title that he won along with Maestro James in Austin, Texas. Salvatore is now leading the gelato lab for Uno Gelato. His favourite gelato flavor is Lemon Sorbetto — make sure you try it when you see it on the menu.
